30-years ago a chance encounter on a Spanish beach led to my sister moving to Mexico, and eventually running the largest private sport fishing fleet in the country.
That is a tale in itself – but it led to me making loads of visits to Mexico over the years to see her. During the course of the visits, and because of my sister’s involvement in the community, and her businesses, I met many local people, lots of them becoming firm friends.
They would, of course, invite me round to dinner – often with their families – and these were always home-cooked affairs. They were always delicious – and they were always HOT!
Our Sauces are:

Often, these meals would be cooked by daughters, mother’s, grandmother’s – using recipes, techniques, and ingredients, handed down through generations of Mexican families. Like learning the Spanish language itself, initially, it was difficult to discern all the subtle variations in the heat and strength of the chillies used in the sauces and pastes.
It was only after many visits, and many afternoons and evenings spent, watching and helping out in the cochina and comedor, that I learned the difference between serrano and habanero, and my chile de arbol from my cascabels.
Whenever I came back to England, I would bring chilis that were impossible to get here – and cook Mexican for friends and family – and they loved it…
Over time I became familiar with blending and matching the strength, the immediate hits of heat, and the longer-lasting, deeper notes that make a proper chilli sauce so memorable.
I started to give people presents of some of the sauces and concoctions I made, and someone suggested that I sell them. I looked into this, and started by selling to friends of friends, and by word of mouth.
Recently I have been doing food fairs and markets and some of the UKs biggest Chilli festivals – so you should come along and check us out. I have extended the range to include jams and pastes.
What I bring to the table is something that few other producers do – a real, passionate enthusiasm for chilli, the inside track on preparing it, and a need to share it with you …
I source many of my ingredients directly from my contacts in Mexico – authentic, or what? You won’t find that anywhere else – even at Waitrose…
